Sweet Pepper & Fresh Mozzarella Quinoa Salad


1) 1 cup of uncooked quinoa

2) 6-10 mini sweet peppers

3) Green pepper (or yellow, red or orange pepper)

4) 1 package cherry tomatoes

5) 8oz fresh mozzarella

6) Light balsamic vinaigrette

7) Fresh cracked pepper


1) Prepare 1 cup of uncooked quinoa following package directions.  Cool prepared quinoa in refrigerator.

2) While quinoa is cooling, wash and cut up sweet bell peppers, green pepper, cherry tomatoes and fresh mozzarella into bite size pieces.

3) Combine cooled quinoa with vegetables and fresh mozzarella. Drizzle with light balsamic vinaigrette dressing. Season with fresh cracked pepper.

Makes a great side salad or lunch entree! Boys even like it 😉
